Grown in a very high and dry region farm in HueHuetanengo; "the mountain" or Chq'Ul. The farm is maintained by farmer Gomez. The cup quality is really pristine; with a depth that I'm anxious to keep learning about and sharing its true flavours with you. 

Roasting this takes a bit of heat at first; but needs to be developed much more than the frequent natural process offerings I've had on the menu. There's something in this green that presents just that. Nothing experimental, nothing to hide. Just a really good of coffee.
