This coffee is special. The farmer who created this is Juan Pablo and his family in the high elevation of Colombia. After harvest, he keeps the coffee cherries intact then puts them into huge steel drums then pushed all the oxygen out to crush them. He'll leave them there for about 168 hours then process them as typical natural process coffee; letting the cherries dry out on raised beds. This is what creates this amazing wine-like flavour. And big surprise this technique was inspired from winemaking!
When I started in coffee, there was the wine-like flavor I tasted when I had my first Geisha cup. There was body, acidity, juiciness, complexity, and each sip it actually inspired me to get more adventurous about what I was seeking in the cup.
"This is different," I thought. And from there I began to chase those flavors and I always get excited if I get to drink something like this fermented coffee from Colombia.
